Preheat the oven to 375°F (190°C) and slit each chicken thigh in the middle for stuffing, then season with salt and pepper.
Melt butter in a skillet over medium-high heat, add onions, and cook until softened and caramelized, then season with dried thyme, salt, and pepper.
Transfer half of the caramelized onion mixture to a plate, and stuff each chicken thigh with the remaining onions, topping with cheeses, and securing with toothpicks.
In the same skillet, heat olive oil over medium-high, add the stuffed chicken thighs, and sear for 3 minutes per side until golden brown.
Add reserved caramelized onions and beef broth to the skillet, then transfer it to the oven and bake for 20 minutes until chicken is cooked through.
Allow the chicken to cool slightly before serving.
