jicama
2 Cups Jicama, Sliced into French Fry Size Pieces
olive oil
2 Tbsp Olive Oil
sea salt
1 Tsp Sea Salt
garlic powder
1/4 Tsp Garlic Powder
cumin
1 Tsp Cumin
paprika
1 Tsp Paprika

Fish

fish
3/4 Lb White Fish (we used Cod)
frying oil
Frying Oil
almond flour
1/2 Cup Almond Flour
onion powder
1/4 Tsp Onion Powder
paprika
1/2 Tsp Paprika
parmesan cheese
1/2 Parmesan Cheese, Grated
egg
1 egg

DIpping Sauce

dill relish
2 Tbsp Dill Relish
curry powder
1/4 Tsp Curry Powder
mayo
1/2 Cup Mayo

Directions

***Chips***

Peel jicama and slice into french fry pieces.

Sprinkle 1/2 teaspoon sea salt into medium pot of water. Bring to a boil.

Boil jicama fries in boiling water for 10 minutes. Drain in colander.

Place drained jicama pieces into a large mixing bowl. Coat with  oil, then sprinkle on 1/4 teaspoon sea salt, garlic powder, cumin, and smoked paprika. Blend in spices.

Spread fries onto oiled baking pan. Bake at 400°F for 30 minutes, turning halfway through baking time, until fries are crisp. You can toss then into the deep fryer for about 5 minutes to make extra crispy.

***Fish***

Crack egg in a bowl and beat thoroughly.

On a separate plate, combine Parmesan cheese, almond flour, and the  spices.

Slice the fish into 1 inch by 1 inch pieces. Roll them on the flour mixture. Dip in the beaten egg and sprinkle more flour to cover the pieces again completely.

Place in deep fryer at about 345-360°F. Fry the fish for about three minutes. Remove from the heat when it becomes golden brown but make sure that the fish is cooked through.

Transfer to a serving plate and serve with the jicama fries and dipping sauce sauce.

***Dipping Sauce***

Mix ingredients in a bowl and serve!
