spring onions
2 Spring Onions, sliced
garlic
1 Tsp Minced Garlic
cream cheese
6 oz Cream Cheese, cubed
pre-shredded mozzarella
1/2 Cup Pre-Shredded Mozzarella
cheddar cheese
1 Cup Cheddar Cheese, shredded
heavy whipping cream
1/4 Cup Heavy Whipping Cream
chicken broth
1/4 Cup Chicken Broth
pulled pork
1 lb Pulled Pork
bbq sauce
4 Tbsp BBQ Sauce (Keto-friendly, Optional)
salt and pepper

Directions

Preheat the oven to 180°C/350°F.

Ensure the cauliflower is steamed until tender. Drain any excess liquid and set aside.

In a large pot, melt the butter over medium-high heat. Once melted, sauté the sliced bottoms of the spring onions along with the minced garlic for 2 minutes, or until aromatic.

Introduce the cubed cream cheese, mozzarella, and 3/4 of the shredded cheese to the pot. Stir gently until cheeses begin to melt.

Gradually incorporate the heavy cream and chicken broth, continuing to stir until the mixture transforms into a thick, creamy sauce.

Fold in the steamed cauliflower, ensuring each floret is coated with the cheese sauce. Transfer the mixture to a casserole dish, spreading it evenly.
