spring onions2 Spring Onions, sliced
garlic1 Tsp Minced Garlic
cream cheese6 oz Cream Cheese, cubed
pre-shredded mozzarella1/2 Cup Pre-Shredded Mozzarella
cheddar cheese1 Cup Cheddar Cheese, shredded
heavy whipping cream1/4 Cup Heavy Whipping Cream
chicken broth1/4 Cup Chicken Broth
pulled pork1 lb Pulled Pork
bbq sauce4 Tbsp BBQ Sauce (Keto-friendly, Optional)
salt and pepperSalt and Pepper to Taste


Preheat the oven to 180°C/350°F.
Ensure the cauliflower is steamed until tender. Drain any excess liquid and set aside.
In a large pot, melt the butter over medium-high heat. Once melted, sauté the sliced bottoms of the spring onions along with the minced garlic for 2 minutes, or until aromatic.
Introduce the cubed cream cheese, mozzarella, and 3/4 of the shredded cheese to the pot. Stir gently until cheeses begin to melt.
Gradually incorporate the heavy cream and chicken broth, continuing to stir until the mixture transforms into a thick, creamy sauce.
Fold in the steamed cauliflower, ensuring each floret is coated with the cheese sauce. Transfer the mixture to a casserole dish, spreading it evenly.
Evenly layer the pulled pork over the cauliflower mixture, followed by the remaining shredded cheese.
Cover the casserole dish with foil and place it on the top rack of the preheated oven. Bake for 20 minutes, removing the foil halfway through to allow the top to brown.
Once baked, remove from the oven and optionally drizzle with keto-friendly BBQ sauce. Garnish with the sliced tops of the spring onions.
