rotel tomatoes1 14 oz Can Rotel Tomatoes with Chilis
monterey jack cheese2 Cups Shredded Monterey Jack Cheese
cream cheese4 Oz Cream Cheese
cheddar cheese1 Cup Cheddar Cheese
beef broth1 Cup Low Sodium Beef Broth
cilantro1/2 Cup Chopped Cilantro
bell pepper1 Green Pepper, Diced
lime zest1 Lime, Zest and Juice
salt1 Tsp Salt


Preheat the oven to 375°F.
In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat. Stir in the Keto Taco Seasoning and mix well.
Add cream cheese, beef broth, diced green bell pepper, Rotel tomatoes, and salt. Stir continuously until the cream cheese is thoroughly integrated into the sauce.
(Optional) For a thicker sauce, dissolve 1 tbsp of cornstarch in 2 tbsp of water and stir into the skillet. This may add about 1 carb per serving.
Mix in the cilantro, lime juice, and lime zest.
Transfer the beef mixture into a large casserole dish. Evenly spread the shredded Monterey jack cheese on top and finish with a layer of cheddar cheese.
Bake for 10-15 minutes, or until the casserole is hot, bubbly, and the cheese has a light brown tint. Remove from oven, let it sit for a few minutes, and serve.
