mushrooms6 oz Mushrooms
carrots4 Carrots
broccoli1/2 Cup Broccoli
cauliflower1/2 Cup Cauliflower
bell peppers1/2 Cup Red and Yellow Bell Peppers
onion1/4 Cup Red Onion
zucchini squash2 Zucchini Squash
butter3 Tbs Butter
garlic2 Tbs Minced Garlic
parmesan cheese1/2 Cup Parmesan Cheese – Finely grated
rosemary3 sprigs rosemary

Directions

Preheat the oven to 400F.

Chop all your vegetables to the desired sized.

Mix the vegetables and place in a large glass baking dish, top with minced garlic, butter and seasonings

Bake for 25 minutes, pull the vegetables out and lightly toss them to make sure the butter and seasonings are evenly distributed.

Bake for 15 minutes more, remove from oven and sprinkle Parmesan cheese evenly over the top and bake for an additional 5-10 minutes.
