Preheat oven to 450F. Chop the chicken up and cooking it in a pan on the stove top.
Cook the bacon in the oven for 15-20 minutes at 450F. Lower oven to 350F.
Chop up a head of cauliflower into florets.
Cook the cauliflower in the microwave on the vegetable setting.
Chop up the onions and peppers and pan fry.
Add all of the other ingredients, reserving 2 Oz Cheddar and 2 Oz of Monterey Jack.
Add the mixture into a large, greased casserole dish and top with the remaining cheese.
Cover with foil and cook for 25 minutes at 350F, then 5 minutes without the foil.
