Set the Instant Pot to the medium saute setting. Chop up the bacon slices and fry until crisp. Turn Instant Pot off. Set the bacon aside.
In a mixing bowl whisk together the eggs, heavy whipping cream,green onions, salt, and pepper.
Grease the inside of an Instant Pot sized cake pan. Add 1 cup of the shredded cheese. Add crumbled bacon. Pour the egg mixture into the cake pan.
Place the steam rack inside of the Instant Pot and add 1 cup of water. Place cake pan inside of the Instant Pot on top of the steam rack. Cover the cake pan with tented foil.
Lock the Instant Pot lid then select high pressure, and set the timer for 25 minutes. When it’s done cooking let it sit for 8 minutes before releasing the pressure.
Remove from instant pot and top with remaining 1/3 cup of shredded cheese and broil for 5 minutes.
