2 Lbs Cubed Stew Meat
avocado oil
2 Tbsp Avocado Oil
butter
1 Tbsp Butter
onion
1 Medium Onion, diced
garlic cloves
3 Large Garlic Cloves, minced
chicken stock
2 Cups Homemade Beef or Chicken Stock
xanthan gum +)
1/4 Tsp Xanthan Gum + 1/2 Tsp Avocado Oil (Slurry)
worcestershire sauce
2 Tbsp Worcestershire Sauce
thyme
3 Sprigs Fresh Thyme
garlic powder
1 Tbsp Garlic Powder
onion powder
1/2 Tsp Onion Powder
salt and pepper

Directions

Generously season the stew meat with salt and pepper.

In a large pot over medium-high heat, heat the avocado oil and brown the stew meat in batches. Set the browned meat aside.

In the same pot, melt the butter and cook the onions with a pinch of salt until translucent, about 5 minutes. Be sure to scrape the fond (brown bits) off the bottom of the pot. Add the garlic and cook for an additional 30 seconds.
